Ingredients

For the Steak & Veggies:

  • 1 lb shaved beef ribeye or sirloin
  • 1 tbsp olive oil
  • 1 small onion thinly sliced
  • 1 small green bell pepper thinly sliced
  • 1 small red bell pepper thinly sliced
  • 2 cloves garlic minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika

For the Provolone Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 1 cup shredded provolone cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Dijon mustard
  • Salt & pepper to taste

For the Pasta:

  • 1 20 oz package cheese tortellini
  • 2 tbsp chopped fresh parsley for garnish

Instructions

Cook the Steak & Veggies:

  • Heat olive oil in a large skillet over medium-high heat. Add the shaved beef and cook until browned, about 3-4 minutes. Remove from the pan and set aside. In the same pan, sauté onions, bell peppers, and garlic until soft, about 5 minutes. Season with salt, pepper, and smoked paprika. Return the beef to the skillet and stir to combine.

Make the Provolone Sauce:

  • In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in the milk and heavy cream, whisking continuously until smooth. Let it simmer until thickened, about 3 minutes. Reduce heat and stir in provolone, mozzarella, Parmesan, garlic powder, onion powder, and Dijon mustard. Season with salt and pepper to taste.

Cook the Tortellini:

  • Boil tortellini according to package instructions. Drain and set aside.

Combine Everything:

  • Add the cooked tortellini to the provolone sauce, tossing until fully coated. Stir in the cheesesteak mixture and mix well.

Serve & Enjoy:

  • Plate the pasta and garnish with chopped parsley. For extra cheesiness, sprinkle more provolone on top and broil for 1-2 minutes until bubbly.

Notes

  • Best Steak Choice: Shaved ribeye gives the most authentic cheesesteak flavor, but sirloin or flank steak (thinly sliced) also works well.
  • Shortcut Tip: If you're short on time, use store-bought Alfredo sauce and mix in provolone for extra cheesiness.
  • Tortellini Options: Cheese tortellini works best, but you can swap it for beef or spinach tortellini for a twist.
