- 1 lb shaved beef ribeye or sirloin
- 1 tbsp olive oil
- 1 small onion thinly sliced
- 1 small green bell pepper thinly sliced
- 1 small red bell pepper thinly sliced
- 2 cloves garlic minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
For the Provolone Sauce:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 ½ cups whole milk
- ½ cup heavy cream
- 1 cup shredded provolone cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp Dijon mustard
- Salt & pepper to taste
For the Pasta:
- 1 20 oz package cheese tortellini
- 2 tbsp chopped fresh parsley for garnish
Cook the Steak & Veggies:
Heat olive oil in a large skillet over medium-high heat. Add the shaved beef and cook until browned, about 3-4 minutes. Remove from the pan and set aside. In the same pan, sauté onions, bell peppers, and garlic until soft, about 5 minutes. Season with salt, pepper, and smoked paprika. Return the beef to the skillet and stir to combine.
Make the Provolone Sauce:
In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in the milk and heavy cream, whisking continuously until smooth.
