Ingredients
  

  • Dough:
  • 3 ½ cups 440g bread flour
  • ¼ cup 50g sugar
  • 1 tbsp instant yeast
  • 1 ½ tsp salt
  • 1 cup 240ml whole milk, lukewarm
  • 3 tbsp unsalted butter softened
  • Butter Block:
  • 1 cup 226g unsalted butter, cold
  • 2 tbsp flour
  • Filling Options Choose One:
  • Chocolate Ganache – ½ cup melted chocolate + ¼ cup heavy cream
  • Vanilla Pastry Cream – 1 cup whole milk + ¼ cup sugar + 1 egg yolk + 1 tbsp cornstarch + ½ tsp vanilla
  • Strawberry Jam – ½ cup strawberry preserves

Instructions
 

  • Prepare the Dough
  • Mix flour, sugar, yeast, and salt in a bowl. Add warm milk and knead until smooth (10 min).
  • Add softened butter and knead for another 5 minutes. Cover and chill for 2 hours.
  • Make the Butter Block
  • Place butter between parchment paper, sprinkle flour, and flatten into a 7x7-inch (18x18cm) square. Chill for 30 minutes.
  • Laminate the Dough
  • Roll out the dough into a 10x10-inch (25x25cm) square. Place the butter block in the center.
  • Fold like an envelope, seal edges, and roll out into a rectangle.
  • Fold into thirds, chill for 30 min. Repeat this process 3 times for those iconic layers!
  • Shape & Fill
  • Roll out the dough to ¼-inch thick and cut circles (about 4 inches in diameter).
  • Place 1 tbsp of your chosen filling in the center, fold the edges to seal, and place in muffin tins.
  • Cover and let rise for 1 hour.
  • Bake to Perfection
  • Preheat oven to 375°F (190°C).
  • Brush tops with egg wash and bake for 18-20 minutes, until golden brown.
  • Let cool, then drizzle with extra chocolate or dust with powdered sugar!

Notes

  • Cold butter = flakier layers. If it softens, chill the dough before continuing.

  • Let the dough rest between folds to develop those airy, crispy layers.
