Ingredients
  

  • For the Crust:
  • 1 1/4 cups all-purpose flour
  • 1/2 cup 1 stick cold unsalted butter, cubed
  • 1/4 tsp salt
  • 3-4 tbsp cold water
  • For the Filling:
  • 1 cup fresh spinach chopped
  • 1 cup shredded cheddar or mozzarella cheese
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/4 cup Parmesan cheese optional
  • 1/4 tsp nutmeg optional
  • 1/4 tsp black pepper

Instructions
 

  • Step 1: Make the Crust
  • In a large bowl, mix the flour and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Gradually add the cold water, 1 tablespoon at a time, until the dough comes together.
  • Shape into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  • Preheat your oven to 375°F (190°C).
  • Roll out the dough on a lightly floured surface and press it into a 9-inch pie pan.
  • Prick the bottom with a fork and pre-bake for 10 minutes. Let it cool.
  • Step 2: Prepare the Filling
  • In a large bowl, whisk the eggs, heavy cream, and milk until smooth.
  • Stir in the spinach, cheddar (or mozzarella), Parmesan (if using), nutmeg, and black pepper.
  • Step 3: Assemble and Bake
  • Pour the filling into the pre-baked crust.
  • Bake for 35-40 minutes or until the center is set and slightly golden on top.
  • Let it cool for 10 minutes before slicing.

Notes

Cheese Variations – Try Swiss, feta, or goat cheese for a different flavor twist.
Add More Veggies – Mushrooms, bell peppers, onions, or sun-dried tomatoes make great add-ins! Just sauté them first to avoid excess moisture.
