Ingredients

For the Pasta:

  • 12 oz penne or rigatoni
  • 1 tbsp salt for boiling water
  • For the Shrimp Scampi:
  • 1 lb large shrimp peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • ½ tsp red pepper flakes optional
  • ¼ cup chopped parsley
  • Salt & black pepper to taste

For the Sauce & Topping:

  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella
  • ½ cup shredded provolone
  • 1 tbsp olive oil
  • ½ tsp Italian seasoning

Instructions

Cook the Pasta

  • Boil the pasta in salted water until just al dente. Drain and set aside.

Sauté the Shrimp

  • In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Toss in the shrimp, cooking until pink (about 2 minutes per side). Stir in lemon zest, juice, red pepper flakes, and parsley. Remove from heat.

Assemble the Bake

  • Preheat oven to 375°F. Toss cooked pasta with the shrimp and its buttery sauce. Pour in the heavy cream, Parmesan, and Italian seasoning, mixing well. Transfer to a greased baking dish.

Cheesy Topping

  • Sprinkle mozzarella and provolone evenly on top. Drizzle with olive oil for extra golden perfection.

Bake to Perfection

  • Bake uncovered for 25-30 minutes or until cheese is bubbly and slightly golden. Let it rest for 5 minutes before serving.

Notes

Garnish with fresh parsley and an extra squeeze of lemon for brightness. Serve hot with garlic bread or a simple green salad.
