Ingredients
  

  • 1 pound smoked sausage Andouille, Kielbasa, or Chorizo, sliced
  • 1 cup white or brown rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional for spice
  • 1 can 14.5 oz diced tomatoes, drained
  • 1/2 cup frozen peas or corn optional
  • Fresh parsley or green onions for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 4-5 minutes. Remove sausage and set aside.
  • Sauté aromatics: In the same skillet, add onion, bell pepper, and garlic. Cook for 2-3 minutes until softened.
  • Add rice and seasonings: Stir in the rice, smoked paprika, salt, black pepper, and red pepper flakes (if using). Cook for 1-2 minutes to toast the rice slightly.
  • Pour in broth and tomatoes: Stir well, then return the sausage to the pan. Bring to a boil.
  • Simmer and cook: Reduce heat to low, cover, and let simmer for 18-20 minutes (longer if using brown rice), until the rice is tender.
  • Stir in peas or corn: If using, add them in the last 5 minutes of cooking.
  • Fluff and garnish: Remove from heat, let sit covered for 5 minutes, then fluff with a fork. Garnish with fresh parsley or green onions.
