Garlic Butter Chicken, Rice & Broccoli Bowl

Ingredients
  

  • For the Chicken:
  • 2 boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tbsp soy sauce for extra flavor
  • For the Rice & Broccoli:
  • 1 cup white or brown rice
  • 2 cups chicken broth for extra flavor
  • 1 1/2 cups broccoli florets
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions
 

1️⃣ Cook the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken, season with paprika, salt, black pepper, and onion powder.
  • Cook for 5-6 minutes until golden brown.
  • Stir in butter and garlic, then drizzle with soy sauce. Cook for 2 more minutes until fragrant. Remove from the pan and set aside.

2️⃣ Cook the Rice

  • In the same pan, add rice and toast for 1 minute.
  • Pour in chicken broth, season with salt, pepper, and garlic powder.
  • Cover and simmer for 12-15 minutes (or until rice is tender).

3️⃣ Steam the Broccoli

  • When the rice has 5 minutes left, place broccoli on top of the rice and cover to steam.
  • If you like softer broccoli, steam separately for 5 minutes.

4️⃣ Assemble & Serve

  • Fluff the rice, mix in the cooked chicken, and serve hot!
  • Garnish with extra garlic butter or a squeeze of lemon for freshness.

Pro Tip: Add a drizzle of sriracha or teriyaki sauce for extra flavor! 🥢
