- 3 large eggs
- 2 tbsp milk or cream
- Salt and black pepper to taste
- 1/2 avocado diced
- 1/4 cup cooked bacon crumbled
- 1/4 cup cherry tomatoes halved
- 1/4 cup shredded cheddar or Monterey Jack cheese
- 1 tbsp butter or olive oil
- 1 tbsp chopped chives or green onions for garnish
In a bowl, whisk eggs, milk, salt, and pepper until well combined.
Heat butter or oil in a nonstick pan over medium heat.
Pour the egg mixture into the pan and let it cook undisturbed for 1-2 minutes until the edges set.
Sprinkle avocado, bacon, tomatoes, and cheese over half of the omelette.
Once the bottom is fully set but the top is still slightly runny, gently fold the omelette in half.
Cook for another 1-2 minutes, letting the cheese melt.
Slide it onto a plate and garnish with chives or green onions.
