Ingredients
  

  • 2 cups fresh arugula
  • 1 cup fresh blackberries
  • 1 ripe avocado sliced
  • ¼ cup toasted walnuts or pecans
  • ¼ cup crumbled goat cheese or feta optional
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar or lemon juice
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • Rinse the blackberries under cold water and pat them dry.
  • Slice the avocado in half, remove the pit, scoop out the flesh, and slice it.

Wash and Dry the Arugula:

  • Rinse the arugula thoroughly and use a salad spinner to remove excess moisture. If you don’t have one, pat it dry with paper towels.

Toast the Nuts:

  • Heat a dry skillet over medium heat and toast the walnuts or pecans for 2-3 minutes until fragrant. Let them cool.

Make the Dressing:

  • In a small bowl, whisk together the olive oil, balsamic vinegar (or lemon juice), honey, salt, and pepper.

Assemble the Salad:

  • In a large bowl, arrange the arugula, blackberries, avocado slices, and toasted nuts.
  • Sprinkle with crumbled cheese, if using.
  • Drizzle the dressing over the salad just before serving.
